There are certain places you keep to yourself. Restaurants you return to, not just to tick a box, but because there is something – in the food and in the atmosphere – that refuses to be forgotten. The restaurant Clos des Vignes is one such place: a restaurant serving cuisine rooted in the French Vexin region, created by a chef who knows his producers by their first names.

Seasonal and locally sourced cuisine

The Vexin is a region of market gardeners, livestock farmers and passionate producers. Chef Cyril Ramon has made this the cornerstone of his menu: every week, the day’s produce dictates what ends up on the plate. No set menu, no fixed dishes — a vibrant cuisine, guided by the changing seasons and the whims of the market.

What defines the brand’s signature style:

  • The market comes first — the menu changes with the seasons, and sometimes even from week to week
  • A deliberately short radius — the majority of the produce used comes from within a radius of less than 30 kilometres of the estate

Chef Cyril Ramon’s gesture

Behind every dish lies a certain sensibility. Cyril Ramon’s sensibility is that of a chef who believes in the ingredients themselves rather than in technical displays. His approach is straightforward: to understand the very best that the season has to offer, and then to decide how to bring out the best in it with as few intervening steps as possible.

This philosophy is evident from the very first mouthfuls. The textures are distinct, the combinations harmonious, and the flavours recognisable yet unexpected. As you eat, you feel as though you’re in on a secret – far removed from the spectacle, close to the essence of the dish.

The setting: dinner in a former farmhouse

The setting plays just as big a part in the experience as what’s on the plate. Le Clos des Vignes is housed in a former Vexin farmhouse, carefully restored and set within a twelve-hectare park. The stonework, the spacious rooms, the filtered light — everything comes together to create an atmosphere that is both serene and warm.

In the evening, the dining room takes on a special atmosphere. The tables are spaced apart, the lighting is subdued, and the service is attentive without being intrusive. You find yourself speaking more softly, lingering between courses, gazing out of the window at the park as it slowly grows dark. This is no place for a quick bite to eat — it’s a place where time seems to stretch out willingly.

On sunny days, the terrace offers a different way to enjoy a meal: in the shade of the trees, overlooking the park, with the characteristic silence of the rural Vexin as a backdrop, barely disturbed by the estate’s animals.

Food and wine pairings
